Made with sumac indigenous to Prince Edward County and lightly sweetened this gin is made in the traditional old Tom style. The amazing @chefjamiekennedy came to our industry opening night 3 years ago and said "you should make something with all the sumac that grows here." It took us this long and countless test batches to get to something that we love. Earthy, spicy, juniper forward with a hint of sweetness this unfiltered gin derives its rich ruby red colour from sumac. We pay homage to the hot summer nights in the County with this gin. Perfectly balanced and luscious we hope you enjoy this in a Tom Collins, in a spiked lemonade or simply on the rocks.
